Organic and biodynamically grown local grape varieties Carricante, Catarratto and Grecanico Dorato from 70 year old vineyards are aged for 6 months in stainless steel in Emilio's small winery. Nothing added or taken away from this white wine other than a small amount of sulphites at bottling. This natural wine from Etna is remarkably fresh - similar to a great Riesling - with flavours of lemons, limes, stony minerals and herbs.

WHAT IT SMELLS LIKE Fresh lemons and limes are found on the nose as well as stony minerals and herbs.
STRUCTURE Carricante, Catarratto, Grecanico Dorato grapes from up to 70 year old vines are aged for 6 months in stainless steel. The result is a delightfully fresh wine, similar to a Riesling. Lemons, pears, apples are all found on the palate. This is a wine to age, thanks to its fresh acidity.
