Ramón Sáenz - Cimadago 2017 Bio, Rioja
Ramón Sáenz - Cimadago 2017 Bio, Rioja
Ramon Saenz cultivates his organic Graciano, Grenache and Tempranillo grapes on the slopes of Rioja Alavesa, arguably the most exciting sub region of Rioja. This red wine is carbonically macerated - vinified with whole bunches under a layer of carbon dioxide - which lends a freshness to the finished bottle. The flavours are on the red fruit spectrum but also include rose and fresh figs. A light but concentrated body that asks you to return for another glass.

- WHAT IT SMELLS LIKE This is a nose to savour. Think dried rose, fresh figs, even a hint of coffee. It’s a carbonically macerated wine so also expect red fruits and liveliness.
- STRUCTURE Very well-balanced wine between fruit maturity and oak ageing. Zippy acidity, medium bodied but a light texture from the carbonic maceration. Expect plenty of fresh fruits and pepper on the palate.
- PAIRING The wine is nuanced so would pair best with lighter foods such as fish or white meat.
