Aquila del Torre owns some incredibly well situated organic Friulano vineyards which are used to make this beautifully elegant white wine. Fermentation happen in concrete vats to preserve freshness with 12 months ageing on the lees. Flavours include almonds, fresh lemons and red apples and the wine is aged on lees which lends a creamy texture. The family uses biodynamic practices in their vineyard and all ploughing is done by animal to ensure the soil remains aerated.

WHAT IT SMELLS LIKE Almonds, fresh lemons and red apples abound on the nose.
STRUCTURE Fermentation and ageing for this wine happens in concrete tanks, and spends 9 months on the lees, which we love because it lends a creaminess to the palate. It’s mineral and slightly savory. Dry, zippy and fresh but with a nice roundedness to the finish.
PAIRING New season asparagus would be a brilliant match. But for the rest of the year, think white fish flavoured with citrus.
