Secondo noi, il Khayyam di Mas de Libian è uno dei vini naturali più apprezzati al mondo. Mas de Libian è un pioniere del movimento dei vini biologici e naturali, che da decenni produce vini eleganti e meravigliosamente equilibrati. Il Khayyam, il loro vino rosso di punta, non fa eccezione. Grenache, Mourvedre e Syrah coltivati biologicamente vengono fatti macerare per circa 15 giorni prima di trascorrere 9 mesi di invecchiamento in un mix di acciaio inox e grandi botti di rovere. Il risultato è un vino rosso caldo e invitante, ricco di aromi di bacche estive e noce moscata.

WHAT IT SMELLS LIKE Warm, inviting and spicy with flavours of black cherries, nutmeg and red late summer fruits. The smell is concentrated and long and best after an hour or two in the decanter.
STRUCTURE This wine has seen 15 days of maceration with light pump-overs. A third of the wine spent another 9 months aging in large oak foudre. The result is a full-bodied, concentrated wine that can easily withstand some ageing in the bottle. The Grenache lends smoothness whilst the Mouvedre and Syrah give structure, tannin and backbone.
PAIRING This wine is an homage to Omar Khayyam, the Persian poet. Happily, it would make a perfect pairing with Persian food. Think fluffy pomegranate spiked rice with slow-cooked lamb in fenugreek, dried limes and herbs.
